Vine Tomatoes and Goats Cheese Bruschetta
Preheat the oven to 220°C/425ºF. Divide the tomatoes into 4 portions of roughly the same size, each still attached to part of the vine. Carefully place in a roasting pan, drizzle with the oil and scatter with the garlic and thyme sprigs. Roast the tomatoes for 10 minutes or until they are tender.
Preheat the grill to high. Toast the bread on both sides until golden. Spread each slice with 1 tablespoon of tapenade, add a few chunks of goat cheese and top with the tomatoes on the vine. Drizzle with the juices from the roasting pan and sprinkle with the basil leaves.
