Cheese Appetizers
This Spinach and Goat Cheese pizza is a vegetarian pizza recipe. Goat cheese pizza recipe is easy to prepare, and great for wine pairing or dinner parties. Pairs with white wines, including: Pinot Grigio and White Burgundy.

Ingredients
- 4 oz sun-dried tomatoes in oil, drained plus 2 tablespoons oil from the jar
- 2 tablespoons tomato paste
- 1 clove garlic roughly chopped
- 2 teaspoons Fresh Thyme finely chopped
- 8 oz baby spinach
- 6 each mini pita breads
- 6 each cherry tomatoes
- 3 1/2 oz soft goat cheese crumbled
- 1 tablespoon sesame seeds

Instructions
- Preheat the oven to 450F. Puree the sun-dried tomatoes, tomato paste and garlic in a food processor or with a hand blender. Mix in the thyme.
- Bring a pan of water to boil, immerse the spinach then remove and refresh the spinach in a bowl of cold water. Drain, and drizzle the sun-dried tomato oil over the top.
- Spread the tomato and garlic puree over the pita breads and top with the spinach. Scatter with cherry tomatoes, cheese and sesame seeds. Cook pita pizzas for 10 minutes or until the cheese has melted slightly and started to brown.
