Gratin of Scallops and Mushrooms
Instructions
  1. Trim the scallops, remove the orange coral and cut the white flesh of each scallop into 8 pieces.
  2. Pour the milk into a non-stick saucepan. Add the scallops, bring to boil and simmer for 5 minutes. Remove the scallops from the milk and set aside.
  3. Add the cream, flour, half the butter and the nutmeg and whisk gently over low heat until the sauce thickens. Add the cheese and let melt, but do not boil.
  4. Saute mushrooms in remaining butter for 2-3 minutes.
  5. Spoon some scallops into the middle of each serving plate. Place mushrooms around the scallops, drizzle any juices over the mushrooms.
  6. Top scallop pieces with the heated sauce.
