Instructions
  1. Preheat oven to 360°F/180°C.
  2. Heat the oil in a large skillet, add garlic and lamb cutlets and brown over medium heat for 2-3 minutes on each side.
  3. Add wine and cook for 2 minutes. Mix the tomato paste with the beef stock and add to the lamb cutlets. Add the rosemary, black olives and pepper.
  4. Transfer lamb to a casserole dish and bake for 30-40 minutes.
