Key Lime Cheesecake
Instructions
  1. Preheat oven to 190°C/380ºF.
  2. In a bowl, combine the cookies and sugar, then stir in the butter well. Pat the mixture evenly onto the bottom and 1cm up the sides of a buttered 25cm/10inch spring form pan. Bake the base in the center of the oven for 8 minutes. Transfer the pan to a rack and let cool.
Filling
  1. Beat together the cream cheese and sugar with an electric mixer until smooth. Beat in the sour cream and flour, add the eggs one at a time, beapang well after each addition.
  2. Add the lime juice and vanilla, and beat until smooth. Pour the filling over the base. Bake for 15 minutes, reduce the temperature to 120°C/225ºF and bake for 50-55 minutes more, or until the center is barely set. Let cool on a rack, then refrigerate, covered, overnight.
  3. Remove the cheesecake from the pan and transfer it to a plate.
Candied Lime
  1. Place 1 cup water and 1 cup of the sugar in a pan. Boil until the sugar dissolves. Add the lime slices and simmer for 10 minutes. Meanwhile place the rest of the sugar on a tray.
  2. Remove the lime slices from the heat, strain and dry on absorbent paper. Cool slightly, then place one at a time on the tray of sugar to coat. Place around the edge of the cheesecake and serve.
