Key Lime Cheesecake

Preheat oven to 190°C/380ºF.
In a bowl, combine the cookies and sugar, then stir in the butter well. Pat the mixture evenly onto the bottom and 1cm up the sides of a buttered 25cm/10inch spring form pan. Bake the base in the center of the oven for 8 minutes. Transfer the pan to a rack and let cool.
Beat together the cream cheese and sugar with an electric mixer until smooth. Beat in the sour cream and flour, add the eggs one at a time, beapang well after each addition.
Add the lime juice and vanilla, and beat until smooth. Pour the filling over the base. Bake for 15 minutes, reduce the temperature to 120°C/225ºF and bake for 50-55 minutes more, or until the center is barely set. Let cool on a rack, then refrigerate, covered, overnight.
Remove the cheesecake from the pan and transfer it to a plate.
Place 1 cup water and 1 cup of the sugar in a pan. Boil until the sugar dissolves. Add the lime slices and simmer for 10 minutes. Meanwhile place the rest of the sugar on a tray.
Remove the lime slices from the heat, strain and dry on absorbent paper. Cool slightly, then place one at a time on the tray of sugar to coat. Place around the edge of the cheesecake and serve.
