Spicy Cheese and Onion Rarebit
Instructions
  1. Preheat the grill to high. Melt the butter in a saucepan over a low heat, then fry the onion for 5 minutes or until softened. Add the Cheddar, cayenne pepper, Worcestershire sauce and cider, beer or milk, bring to a simmer, stirring. When the Cheddar has just melted, remove from the heat.
  2. Meanwhile, toast the bread on both sides. Divide the Cheddar mixture between the slices of toast, grill for 3 minutes or until the topping starts to turn brown.
Recipe Notes

NOTE: Almost everyone loves cheese on toast. In this spicy version, a dash of Worcestershire sauce and a splash of cider or beer accentuate the tangy taste of Cheddar.

Pairs with red wines, including Cabernet Sauvignon.
