Instructions
  1. Heat the vegetable oil in a wok or frying pan over medium heat, add beef and stir-fry for 2-3 minutes or until beef is brown. Remove beef from pan and place in a bowl.
  2. Add onion, lemongrass and garlic to pan and stir-fry for 2-3 minutes or until onion is golden. Add onion mixture, fish sauce and lemon juice to beef, toss to combine and set aside.
  3. Place rice, bean sprouts, green onions, tomatoes, carrot and mint in a bowl and toss to combine. Line a serving platter with the rice mixture, add the beef mixture and sprinkle with cashew nuts.
