Instructions
  1. Blend shrimp, garlic, egg, cornstarch, oil and soy sauce to a paste in a food processor. Or grind shrimp, with a pestle and mortar, mix with the other ingredients.
  2. Spread one side of each slice of bread evenly with shrimp paste, sprinkle with sesame seeds, remove crusts and cut into 4 triangles. To make dipping sauce, mix together ginger, chili sauce and lime juice, set aside.
  3. Heat 1 in / 2 1/2 cm of oil in a large skillet over a medium to high heat. Add half the shrimp triangles, meat-side down, and fry for 4-5 minutes on each side, until deep golden. Drain on paper towels and keep warm while you cook the remaining shrimp triangles. Serve with dipping sauce.
