Peach and Shrimp Salad
Instructions
  1. Place the peaches in a flat dish. Mix the lemon juice, zest, brown sugar, salt, pepper, vinegar, and Tabasco and pour over the peaches. Let stand at room temperature for 30 minutes.
  2. Remove the peaches from the vinegar mixture. Pour the vinegar mixture into a blender or food processor, add the mustard and egg, and process until smooth. With the motor running, add the oil in a thin, steady stream. The dressing will become creamy and thicken slightly.
  3. Divide the salad mix onto 4 plates place 2 peach halves on top of the salad. Add 3 shrimp to each salad plate. Spoon the dressing over the salad and serve immediately.

Pairs with white wines. White wines include: Gewurztraminer and Riesling Off-Dry.
