Chicken and Barley Caserole
Preheat the oven to 180C/375F. Place rice in the bottom of a casserole dish. Place chicken on top. Wash chillies, trim off stalks and add whole chillies to casserole. Add onion and celery to casserole. Pour tomatoes and juice over casserole, season with salt and pepper and top with parsley.
Cover and cook for 1 hour. Remove chillies and parsley and serve immediately. If desired, garnish with fresh chillies.
