Bean Buckwheat and Bacon Salad
Instructions
  1. Boil the buckwheat in 4 cups of water until tender, about 5-10 minutes.
  2. Steam the broccoli and show peas separately until just tender. Drain and place in a large salad bowl.
  3. Cook the bacon in a frying pan, stirring constantly for 4-5 minutes or until lightly browned. Remove and drain on paper towels.
French Dressing
  1. To make dressing, place the olive oil, vinegar, mustard and black pepper in a screw-top jar. Shake mixture to combine.
  2. Add bacon, beans and parsley to salad bowl. Pour over dressing and toss to combine. Serve immediately.
