Roasted Tomato Bell Pepper and Bread Soup
Instructions
  1. Preheat the oven to 180°C/350°F. Lightly oil a baking dish, place tomatoes and bell peppers in the baking dish and bake for 20 minutes or until the skins have blistered. Add in the garlic, onion, cumin and cilantro for the last 5 minutes. Set aside to cool, take out the tomatoes and bell peppers, remove their skins and roughly chop.
  2. Set the slow cooker on high, add the cooked vegetables and stock and cook for 2 hours. Add bread, balsamic vinegar and salt and pepper, and cook for another 50 minutes.
