Chili, Arugula and Lamb Stir-Fry
Instructions
  1. Blend or process onion, garlic, birds-eye chili, cumin, cilantro, 1 tablespoon of the oil, the lime juice and sugar until smooth.
  2. Combine lamb with pureed spice mixture in large bowl, cover and refrigerate for 3 hours or overnight.
  3. Combine the rice with 2 cups water in a saucepan. Bring to a boil, reduce heat to low, cover and cook for 15 minutes. Remove from heat and add the arugula. Let stand covered for 10 minutes.
  4. Heat remaining oil in skillet, stir-fry lamb and marinade in batches until browned. Add basil and lamb to skillet and stir-fry, tossing until combined. Serve with rice.
