Scallops with Zucchini in Apple Butter
Instructions
  1. Coat the zucchini slices and scallops gently in the oil and season.
  2. Heat a large heavy-based skillet until hot. Add the zucchini slices and cook for 2 minutes on one side. Turn the zucchini over and add the scallops to the pan. Cook for 1 minute, turn the scallops over. Cook for a further minute, until the scallops are golden and the zucchini browned.
  3. Remove the scallops and zucchini slices from the pan and keep warm. Pour the apple juice into the pan, add the butter and cook until reduced to a syrupy sauce. Spoon the sauce over the scallops and zucchini slices and garnish with parsley.
Recipe Notes

NOTE: Scallops are expensive but delicious, so save this dish for a special treat for two. Make sure you sear them over a high heat; that way they’ll be sealed and really tender.
