Instructions
  1. Put the mussels in a large saucepan with onion, celery, garlic, and wine. Cook over medium heat until mussels have opened, stirring frequently to make sure mussels are cooked evenly. Discard Vegetables and remove mussels from their shells.
  2. To make vegetables see below.
  3. Mix mussels, mayonnaise, Vegetables, parsley, and lemon juice in a bowl, and add salt and pepper to taste. Serve mussels cold with a green salad or a cold potato salad decorated with a few mussel shells.

  1. To make the Vegetables, combine 1/2 cup water, the onion, celery, red bell pepper, sugar, and vinegar in a small saucepan and boil for 1 minute. Drain and set aside to cool.
