Pea and Fresh Mint Soup
Instructions
  1. Melt the butter in a large heavy-based saucepan. Add the green onions, the stock cube, cover and cook gently for 2 minutes.
  2. Add the peas and lettuce and 30 oz of water. Season well, bring to boil, and simmer for 10 minutes or until the vegetables are tender. Puree the vegetables with the mint and cream until smooth, using a food processor or a hand blender.
  3. Return the soup to the pan. Season again, if necessary, then add the superfine sugar and lemon juice, if using. Reheat gently but do not boil the soup to. Serve in bowls with a spoonful of cream drizzled on top and a sprinkling of chives.
