Grilled Sea Scallop in Cos Spears
Instructions
  1. Coat scallops in cooked couscous. Season and grill scallops. Set aside and let cool. In a mixing bowl, combine orange juice and olive oil.
  2. Line up the spears of baby lettuce leaves, top with sea scallops, blood orange segments, green beans and tomato.
  3. Season the spears with fresh black cracked pepper and drizzle with dressing.
