Instructions
  1. Slice each chicken breast in the side carefully to create a pocket. Slice half of the asparagus into small diagonal pieces. Stuff the chicken with cheese, asparagus and a sprinkle of cracked pepper. Close each breast with a toothpick.
  2. In three separate dishes lay out the flour, egg and breadcrumbs. Add the milk to the egg dish and whisk to combine.
  3. Steam the remaining asparagus and the beans for 4 minutes and set aside.
  4. In a large skillet on medium heat warm the olive oil and cook the chicken breasts, until golden brown. Turn and repeat. Approximately 4-5 minutes on each side. Serve garnished with watercress and accompanied by green beans and fresh asparagus spears.
