- 4 large skinless chicen breast filets cut into 1 inch cubes
- 1 tablespoon olive oil
- 1 clove garlic crushed
- 1 teaspoon ground cilantro
- 1 teaspoon ground ginger
- 1 pinch cayenne Pepper
- 1 teaspoon salt
- 1 each lemon juice only
- 8 oz couscous
- 1 oz butter
- 1/4 cup resh cilantro chopped, plus extra leaves for garnish
- 3 1/2 oz pitted black olives chopped
- freshly ground black pepper
- lemon wedges to serve

- Soak 4 wooden skewers in water for at least 10 minutes. Toss the chicken with the oil, garlic, ground spices, cayenne pepper, salt and 1 tablespoon of lemon juice until the pieces are evenly coated.
- Preheat the grill to high. Thread the chicken onto the skewers and grill for 8-10 minutes, turning occasionally, until slightly charred, cooked through and tender. Keep warm.
- Prepare the couscous according to the package instructions, fluff it up with a fork. Stir the butter, remaining lemon juice, cilantro and olives into the couscous and season. Transfer to serving plates, top with the chicken and drizzle with any pan juices. Serve with the lemon wedges and garnish with cilantro.
NOTE: If you have extra time, marinate the chicken pieces for an hour or more so that they are really infused with the aromatic flavors of the cilantro, ginger and cinnamon.
