Instructions
  1. Place the stock and 2 of the lime leaves in a large saucepan and bring to the boil.
  2. Meanwhile, remove the outer layers of lemongrass and chop finely. Cut the roots from two of the cilantro plants. Remove the leaves from the remaining cilantro and set aside.
  3. Place the lemongrass, cilantro roots, remaining lime leaves and ginger in a mortar. Bruise with a pestle.
  4. Add the lemongrass mixture to the stock. Bring to simmering. Simmer for 2-3 minutes. Add the chicken and French shallots. Simmer for 5-6 minutes or until the chicken is cooked.
  5. Add the lemongrass mixture to the stock. Bring to simmering. Simmer for 2-3 minutes. Add the chicken and French shallots. Simmer for 5-6 minutes or until the chicken is cooked.
  6. To serve, divide the mixture between warm soup bowls. Remove the stalks of lemongrass from the soup, mix gently to combine. For a main meal, serve with steamed jasmine rice.
