Spicy Chicken Soup
Instructions
  1. Heat the vegetable oil in a saucepan over medium heat. Add onion, chillies and garlic and cook, stirring, for 2-3 minutes or until onion is tender. Stir in curry powder, ginger, shrimp paste, turmeric, cumin, nutmeg and black pepper to taste and cook, stirring, for 1 minute longer.
  2. Add stock and rice to pan and bring to boil. Reduce heat to simmering and simmer for 15 minutes. Stir chicken, cilantro and lemon juice into pan and simmer for 5 minutes longer or until chicken is cooked.
