Ingredients
- 3 tablespoons vegetable oil plus extra for greasing
- 4 oz fresh white breadcrumbs
- 1 lime finely grates zest and Juice
- 1/4 cup fresh parsley chopped
- 2 tablespoons Fresh chives chopped
- 1 teaspoon Dijon mustard
- 1 tablespoon Fresh Ginger finely grated
- freshly ground black pepper
- 4 each scod filets skinless

Instructions
- Preheat the oven to 200°C/400ºF. Lightly grease a baking tray or ovenproof dish. Mix together the breadcrumbs, lime zest, parsley, chives, mustard, ginger, oil and seasoning.
- Place the cod filets on the baking tray or in the dish and sprinkle with the lime juice, then season. Divide the topping between the filets, pressing it firmly onto the fish.
- Bake for 20 minutes or until the fish is cooked through and the topping is golden and crunchy.
Recipe Notes
Parsley, chives, lime and ginger all add their flavors to the crispy breadcrumb topping on these succulent cod filets. Serve the dish with oven chips and tomatoes.
Pairs with Pinot Gris.
