Macadamia-Crusted Lamb Racks
Instructions
  1. Trim some of the fat from the racks, leaving only a thin layer.
  2. Place breadcrumbs into a bowl, add butter, macadamia nuts, oregano, basil, parsley and lemon pepper. Mix to distribute ingredients evenly, add only enough egg to just bind the mixture (not too moist). Press firmly onto each rack. Place in a tray, cover carefully with plastic wrap, refrigerate.
  3. Peel the sweet potato and cut diagonally into 3/4 in/2cm slices. Place lamb with the onions in a foil roasting pan and drizzle with a little oil.
At the barbecue:
  1. Prepare covered barbecue for indirect cooking. Heat coals to medium high, gas barbecue to high. Reduce heat to medium once food is placed on the barbeque. Place the foil tray with the sweet potato and onions on indirect heat, cover with lid or hood and cook for 15 minutes.
  2. Open lid, move the potato tray to direct heat and turn the vegetables. Place the lamb racks in the foil tray over indirect heat or place directly onto the grill bars over a drip tray. Cover with hood and cook for 35 minutes.
  3. Remove lamb when done and rest 10 minutes before serving. Remove vegetables. Serve the lamb racks on heated plates with a serving of vegetables.
