Instructions
Perch Rolls
  1. Preheat oven to 360°F/180°C. Place filets skin-side up onto work surface, and season with pepper and salt. Divide vegetable strips between filets, and roll the filet around vegetables. Secure with toothpicks.
  2. Place fish rolls in a baking dish, sprinkle with lemon juice, cover, and bake 20 minutes or until cooked through.
Tomato Basil Sauce
  1. Melt the butter in a saucepan, add onions and garlic, and cook, stirring until onions are soft.
  2. Add wine, tomatoes, tomato paste, salt and pepper to taste. Bring to a boil, reduce heat, and simmer until sauce has slightly thickened.
  3. Add basil and stir well. Spoon sauce over fish rolls.
