Ingredients
Perch Rolls
- 1 each zucchini cut into 4 in strips
- 1 each carrot cut inot 4 in strips
- 1 each celery stalk
- 4 each perch filets
- salt and freshly ground black pepper
- 1 tablespoon lemon juice
Tomato Basil Sauce
- 1 oz butter
- 1 medium onion finely chopped
- 1 large garlic calove crushed
- 1/2 cup dry white wine
- 4 large tomatoes peeled, seeded and chopped
- 1 tablespoon tomato paste
- 1/2 cup sweet basil leaves

Instructions
Perch Rolls
- Preheat oven to 360°F/180°C. Place filets skin-side up onto work surface, and season with pepper and salt. Divide vegetable strips between filets, and roll the filet around vegetables. Secure with toothpicks.
- Place fish rolls in a baking dish, sprinkle with lemon juice, cover, and bake 20 minutes or until cooked through.
Tomato Basil Sauce
- Melt the butter in a saucepan, add onions and garlic, and cook, stirring until onions are soft.
- Add wine, tomatoes, tomato paste, salt and pepper to taste. Bring to a boil, reduce heat, and simmer until sauce has slightly thickened.
- Add basil and stir well. Spoon sauce over fish rolls.
