Instructions
  1. Preheat the oven to 180C/375F. Put the cookies into a plastic bag and crush with a rolling pin. Gently heat the butter and golden syrup until melted, stirring. Mix in the cookies, then pack into an 18cm/7 inch loose-bottomed cake pan and bake for 15 minutes or until crisp. Cool for 20 minutes.
  2. Beat the cream cheese with the sugar until soft. Melt half the chocolate drops in a bowl set over a saucepan of simmering water. Blend the cocoa to a paste with 2 tablespoons of boiling water. Stir into the melted chocolate and then fold in the cream cheese mixture. Stir in the remaining chocolate drops.
  3. Whip half of the cream until it forms soft peaks. Fold it into the chocolate mixture, then spoon over the cookie base. Refrigerate for 2 hours or until set. Remove from the pan. Whip the remaining cream and spread over the cheesecake and top with the chocolate shavings.
Recipe Notes

To make this cheesecake even more decadent, beat a little fruity liqueur into the cream.

Pairs with Tawny Port.
