Instructions
  1. Place the endive and arugula on a serving platter. Top with the chickpeas, cheese, onion, and trout. Sprinkle the salad with basil and top with bell pepper.
Honey Lime Dressing
  1. To make the Dressing, place the yogurt, mint, cumin, honey, and lime juice in a bowl and mix to combine. Add salt and pepper to taste. Drizzle the dressing over the salad and serve immediately.

Recipe Notes

Chickpeas are slightly firm and give a nutty flavor to salads, casseroles, soups, and other savory dishes. Dried chickpeas can be used instead of canned. To cook dried chickpeas, soak overnight in cold water. Drain. Place in a large saucepan, cover with cold water and bring to boil over medium heat. Reduce the heat and simmer for 45-60 minutes or until the chickpeas are tender. Drain and cool.
