Instructions
  1. Preheat oven to 180°C/375F.
  2. Sift flour, cornstarch, custard powder and confectioners sugar into a large mixing bowl. Rub in butter with your fingers until mixture resembles coarse breadcrumbs. Make a well in the center of the mixture and stir in egg yolk and enough water to make a firm dough. Wrap in plastic wrap and refrigerate for 30 minutes.
  3. Roll out pastry to fit the base of a greased 20cm8 inch spring form pan. Using a fork, prick pastry base and bake for 10 minutes. Set aside to cool.
  4. In a bowl, mix together the sugar, cinnamon and cardamom. Spread evenly over cooled pastry base.
Filling
  1. Place cream cheese, yogurt, sugar, eggs, vanilla and lemon zest in a mixing bowl and beat until smooth. Fold in sultanas.
  2. Spoon mixture into prepared base. Bake for 20-25 minutes or until firm. Turn off oven and let cheesecake cool in oven with door ajar.
Topping
  1. Place cream, lemon juice and zest in a small saucepan and bring to a boil, simmer, stirring, for 5 minutes or until mixture thickens. Pour topping over cooled cheesecake and chill.
