Saffron Rice with Seafood
Instructions
  1. Heat the saffron in the stock and let it infuse. Heat the olive oil in a skillet, paella or flattish casserole dish and gently cook the onions until soft and golden. Add the rice and cook, stirring until well coated with oil. Add the hot stock, stirring until mixture comes to a boil, reduce the heat and simmer gently for 10 minutes.
  2. Add the shrimp and scallops, pressing gently into the rice. Continue to cook for 5 minutes. Add the prepared mussels or clams, which should open in the heated rice. If you have a lid, partly cover the rice. When the rice is tender (about 18-20 minutes) remove from heat and gently stir the rice with a fork. Sprinkle cilantro over dish and serve.
  3. Pairs with Sake, Sparkling and White Wines. Sparkling wines include: Champagne, Prosecco and Sparkling. White wines include: Gewurztraminer, Riesling Off-Dry, Sancerre, and White Burgundy. Chef Vivant's recommended wine pairing is White Burgundy.
