Waterc ress Vegetable Soup
Cut the carrots and leek into very fine julienne strips. Cut the celery into thin diagonal slices. Wash the lettuce, choose six outside dark green leaves and six lighter inside leaves, roll them up and shred them finely. Peel the tomato, remove the seeds and cut the flesh into small cubes. Wash the cucumber, scoop out the seeds with a teaspoon and cut the flesh into tiny cubes. Cut the mushrooms into thin slices.
Drop the carrot, leek and celery into a saucepan of boiling water and cook for 3-4 minutes. Drain and refresh in cold water. Place equal amounts of shredded lettuce and watercress in six large soup bowls, divide the cooked vegetables among them. Add the tomato, cucumber and mushrooms. Ladle stock into bowls and garnish with the watercress.
Pairs with Merlot and Chablis.
