  1. Preheat oven to360°F/180°C. Cut 4 pieces of aluminum foil, each measuring 12 x 12 in/ 30 x 30cm they should be large enough to wrap a salmon steak into a loose parcel with the parcel edges folded over twice. Oil the shiny side of each piece of aluminum foil with 1/2 tablespoon of oil, using a pastry brush or your fingers. Season with salt and pepper.
  2. Rinse the fish under cold water and pat dry with paper towels. Place each steak on a piece of aluminum foil. Mash the butter with the herbs, using a fork, and put a quarter of the mixture on top of each steak. Wrap the fish loosely in the aluminum foil, folding the edges over twice to seal.
  3. Bake for 15-20 minutes, until the fish is opaque and cooked through. The cooking time will vary depending on the thickness of the steaks, so open a parcel to check if the fish is cooked. Unwrap to serve.

Recipe Notes

NOTE: Add a few vegetables to each parcel for extra flavor, like finely chopped carrots or sliced tomato. If you have a bottle of white wine open, replace the butter with 1 tablespoon of wine per parcel but use baking paper for the wrapping as the acid in the wine may discolor the aluminum foil.
