Roasted Bell Pepper with Herbs salad is a great summertime, vegetarian salad recipe or vegan salad recipe. It pairs with a number of white wines including: Pinot Grigio, Gruner Veltliner, Riesling Off-Dry, Sancerre and Sauvignon Blanc.

Roasted Bell Pepper with Herbs
Instructions
  1. Place red and green bell peppers and chilies in a hot skillet or comal and cook until skins are blistered and charred. Place bell peppers and chilies in a plastic food bag and let stand for 10 minutes or until cool enough to handle.
  2. Carefully remove skins from bell peppers and chilies, cut off tops and remove seeds and membranes. Cut into thick slices.
  3. Place onions in skillet or comal and cook for 5 minutes or until soft and charred.
  4. Place bell peppers chilies, onions, marjoram, thyme, lime juice, oil and black pepper to taste in a bowl and toss to combine. Stand for 30 minutes before serving.
  5. Pairs with a number of white wines including: Pinot grigio, Gruner Veltliner, Riesling Off-Dry, Sancerre and Sauvignon Blanc.
Recipe Notes

NOTE: A comal is a steel, cast iron or unglazed earthenware cooking disk, which is used for cooking and heating tortillas and for toasting other ingredients such as chilies and pumpkin seeds.
