This Baked Lemon Cheesecake is a nice summertime dessert. It is easy cheesecake recipe to make and pairs with Tawny Port wine. For more information on Tawny Port wines, see below.

Tawny Ports are fortified wines that are aged for long times in wood casks slowly oxidizing them and imparting complex flavors to the resulting sweet wines. Flavors and aromas of hazelnuts, walnuts, caramel and butterscotch with dried fruits. Tawny Ports are ready upon release and are not vintage labeled but labeled by how much time they have spent in cask.

Instructions
  1. Preheat oven to 160°C/325ºF. Crush cookies to fine crumbs. Lightly beat egg white with 1 tablespoon water and mix into cookie crumbs.
  2. Line the bottom of a 20cm/8 inch spring form pan with baking paper. Press crumb mixture into the base.
  3. Soften cream cheese. Beat cream cheese, cottage cheese, eggs, sugar, lemon juice and lemon zest together until combined.
  4. Pour into pan. Bake for 55 to 60 minutes or until set.
