Mustard chicken is an excellent slow cooker recipe. It is easy crockpot meal to prepare. This slow cooking recipe pairs with red and white wines. Red wines include: Barbera Beaujolais, Carmenere, Chianti, Pinot Noir and Red Burgundy, Sangiovese. White wines include: Chardonnay, Gewurztraiminer, Gruner Veltliner, Pinot Gris, and Viognier. Chef Vivant's recommended best wine pairing is Chardonnay.

Instructions
  1. In a bowl, combine the carrot, onion, garlic, herbs and salt and pepper. Place half the pork in the base of the slow cooker, add half the vegetables. Add the chicken pieces, the remaining vegetables and the remaining pork. Place bacon slices on top.
  2. Add the combined wine and brandy. Place a piece of foil over the slow cooker, cover with lid and cook on low for around 5 hours (cooking time may vary depending on the tenderness of the chicken).
  3. Make mustard sauce. See below.
  4. Arrange the chicken pieces, pork and vegetables on warmed serving platter, and pour over the mustard sauce. Serve with potatoes, sprinkled with parsley.

Mustard Sauce
  1. To make the sauce, drain off the cooking liquid, skim off any fat and pour into a small saucepan. Beat egg yolk and cream together, add to saucepan and whisk. Cook gently until thick, do not let the sauce boil. Add the mustard and whisk until thoroughly blended.
Recipe Notes

Rabbit can be used in this recipe instead of chicken.
