Tomato Toasts with Fresh Basil
Preheat the oven to 220C/410F. Combine 3 tablespoons of the oil with the dried herbs and pepper and season well. Brush both sides of each bread slice with the flavored oil. Cook for 8 minutes or until lightly golden and crisp.
Put the tomatoes in a bowl, cover with boiling water and leave for 30 seconds. Peel and deseed, then roughly chop the flesh.
Heat the remaining olive oil in a skillet and add the garlic, chopped tomatoes, sun-dried tomatoes, vinegar, sugar and basil. Cook, stirring occasionally, for 5 minutes or until heated through. Remove from the heat. Pile the tomato mixture on top of the toasts, season and serve.
NOTE: Tomatoes and basil make a great Mediterranean topping for these herby toasts. Add slices of mozzarella and brown under the grill for a more substantial snack.
