Pecan Praline Cupcakes
Instructions
  1. Preheat the oven to 160°C/325ºF. Line a 12-cupcake pan with cupcake papers. In a medium-sized bowl, lightly beat the eggs add butter and sugar, mix until light and fluffy
  2. Add milk and flour, and stir to combine. Add remaining ingredients. Mix with a wooden spoon for 2 minutes, until light and creamy.
  3. Divide the mixture evenly between the cup cakes. Bake for 18-20 minutes until risen and firm to touch. Cool for a few minutes, transfer to a wire rack. Let cool completely before icing.
  4. Pairs with Champagne and Sparkling wine.
Topping
  1. Combine sugar, butter and 100mL/1/2 cup water in a saucepan, bring to boil and simmer over medium heat until the mixture becomes a golden color. Stir in pecans and quickly pour onto an oiled tray. Let cool and harden before breaking into pieces.
  2. Beat the icing sugar and butter until light and fluffy. Use a piping bag fitted with a plain nozzle pipe the icing on the cupcakes. Decorate with praline pieces.
