This summertime, chicken salad recipe is very versatile. In addition, this easy chicken salad recipe pairs with both white and red wines. White wine pairings include: Chardonnay, Riesling Off-Dry, Viognier, Gruner Veltliner, Pinot Gris and Gewurztraminer. Red wine pairings include: Carmenere, Red Burdundy, Sangiovese, Chianti, Pinot Noir, Barbera and Beaujolais. Chef Vivant recommended best white wine pairing is Chardonnay. Chef Vivant recommended best red wine paring is Barbera.

Instructions
  1. Heat a non-stick skillet over a high heat. Lightly oil chicken, add to skillet and cook for 2-3 minutes each side or until tender. Remove from skillet and set aside to cool.
  2. Make dressing. See Vinegar and Prune Dressing section.
  3. To assemble salad, cut chicken breasts into thin slices. Arrange spinach, beans, onion, chicken and capers attractively on serving plates. Drizzle a little warm dressing over the salad and serve immediately. Serve any remaining dressing separately.
  4. Pairs with both white and red wines. White wine pairings include: Chardonnay, Riesling Off-Dry, Viognier, Gruner, Veltliner, Pinot Gris and Gewurztraminer. Vinegar and Prune Dressing
  1. To make dressing, place prunes, oregano, lemon zest, sugar and vinegar in a saucepan over a low heat, bring to simmering and simmer for 5 minutes.
