Noodles and Shrimp with Jamon

Noodles and Shrimp and Jamon
Prepare the noodles according to the package instructions, drain. Heat the oil in a large wok or heavy-based skillet until very hot.
Add the chili, fried noodle paste, vinegar and sugar to the pan and cook for 1-2 minutes, stirring constantly, to release the flavors. Add the bell pepper and mushrooms and stir-fry for 3 minutes or until the vegetables have softened.
Add the jamon, peas, water chestnuts and prawns and stir-fry for 2-3 minutes, until the prawns turn pink. Add the green onions and noodles. Cook for 1 minute, stirring, or until the prawns are cooked through and everything is hot. Add the juice of 1/2 lemon and serve.
