Pistachio Mini Cupcakes is an excellent, fun dessert recipe.  This cupcake recipe is great as a featured dessert for parties or special events including weddings, graduations, birthdays, etc.  Cupcakes pair with Champagne and Sparkling wines.

Instructions
  1. Preheat the oven to 350ºF. Line a 24 mini cupcake pan with mini cupcake papers. In a medium sized bowl, use an electric mixer on high speed to cream the butter and sugar until light and fluffy. Add the egg and mix well.
  2. Add the flour, milk and vanilla, and beat with an electric mixer on medium until well combined. Add the pistachios.
  3. Divide the mixture evenly between the 24 mini cupcakes. Bake for 10-15 minutes until well risen and firm to the touch. Cool for a few minutes and then transfer to a wire rack. Let cool completely before icing.
Topping
  1. Use an electric mixer on high speed to beat the butter, until light and fluffy. Gradually beat in the powdered sugar until all ingredients are combined, continue beating for 1 minute then tint the icing light purple with the food coloring. Use a piping bag fitted with a star nozzle to pipe the icing on each cupcake and decorate with pistachios.
