Noodles with Broccoli and Carrots is a vegetarian recipe and an excellent entree.  This rice noodle recipe airs with Sancerre and White Burgundy wines.

Noodles with Broccoli and Carrots
Instructions
  1. Prepare the noodles according to the package instructions, drain. Heat the oil in a large wok or heavy-based pan, add the ginger and chilies and stir-fry for 1-2 minutes to soften.
  2. Add the garlic and onions and saute for 5-6 minutes, until the onions have browned. Stir in the honey and cook for 6-8 minutes, until the honey starts to caramelize.
  3. Add the stock and vinegar to the onion mixture. Bring to boil, reduce the heat and simmer uncovered, for 8 minutes or until the liquid has slightly reduced. Stir in the broccoli and carrots, cover, and simmer for 8-10 minutes or until the vegetables are just cooked.
  4. Add the noodles and mix well. Cook the noodles stirring, for 2-3 minutes until the noodles are hot and most of the liquid has evaporated. Serve in bowls and sprinkle with chives.
  5. Pairs with Sancerre and White Burgundy wines.
