Chicken Shish Kebabs
Instructions
  1. Place parsley, rosemary, thyme, garlic, black pepper, lemon juice, zest and oil into a non-reactive bowl. Add chicken and toss to combine. Cover and marinate in the refrigerator for at least 30 minutes.
  2. Preheat barbecue or broiler to a high heat. If using bamboo skewers, soak in cold water or at least 20 minutes.
  3. Thread chicken onto skewers. Place on barbecue grill or under broiler. Cook chicken brushing frequently with marinade and turning for 6-10 minutes. Serve with red bell pepper harissa for dipping.
Red Bell Pepper Harissa
  1. Preheat the broiler to hot. Using your hands, flatten bell pepper and tomato halves and place skin-side up on aluminum foil under broiler. Cook until skins blacken. When cool, remove skins.
  2. Place the bell pepper and tomato flesh in a food processor, add other Ingredients to taste. Purée and set aside until ready to serve.
